Choosing a wine for creamy chicken pasta
In this recipe, I used dry Pinot Grigio white wine to make my Creamy white wine pasta sauce, which can add the perfect flavor tothe pasta. I recommend that never use a “cooking wine” for making sauce; instead, use regular drinking wine, which always gives a better taste because the traditional drinking wine is much higher quality than a “cooking wine.” Italian chicken pasta is always having a great taste when we add a high-quality drinking wine to it.
If you do not use a drinking wine or not has access to wine, then these are the alternatives that you can use instead of wine.
Lemon Juice
Lemon juice is the best substitute for your chicken pasta sauce. You can use the juice of two lemons into your sauce, and with lemon juice, you have to add half a cup of chicken stock as well.
White Wine Vinegar
White wine vinegar can also be used as a substitute for wine, because it is made of white wine and nearly equal to white wine in taste and flavor. Just a tweak of vinegar is enough with a half cup of chicken stock for the recipe. Try to avoid using more vinegar because it can curdle the cream.
Chicken or Vegetable stock
If you do not like vinegar, you can use chicken or vegetable stock instead of using vinegar. If you want extra flavor, you can mix a tablespoon of lemon juice per one stock cup.
Choosing pasta for creamy chicken pasta with white wine sauce
I am using Linguine to make this pasta dish, but you can use your favorite pasta. You can use whole grain or whole wheat pasta to make pasta more nutritional and healthier.
Choosing chicken for white wine pasta.
In this recipe, I am using four pieces of boneless chicken breast. It recommendsusing thin chicken breast because lean chicken breast is cooked easily, and ittook less time to cook.
Now all discussion about ingredients is over.We are moving to our cooking side.
Cooking chicken breasts.

First Step
Clean chicken breasts with water and make sure that chicken dried well. Then take a bowl and put chicken breasts, 1 cup of flour, salt, black pepper, garlic powder, and Italian seasonings, and mix all of them well. After mixing them, keep the mixture aside for margination for at least one hour.
Second Step
To cook these marinated chicken breast pieces, add two tablespoons or, as required, cooking oil in a pan and put it on the stove. Set heat to high; when the cooking oil is hot, put marinated chicken breast pieces in hot oil, and cook each side for four to five minutes. Cook these chicken pieces until they come golden brown. Usually, it takes eight to ten minutes to cook the chicken breasts perfectly. When chicken is cooked well, then remove it from the pan and set aside.

Making white wine sauce
Step 1
Put a pan on the stove and heat it. When hot, add some butter to melt.
Step 2
Once butter melted completely, then add sliced onion and garlic cloves in it. Cook them until they got medium brown color. This will take 2 minutes on medium-high flame.
Step 3
When onion and garlic get brown, add chopped scallions and sliced tomatoes and cook them until they get soft.
Step 4
When tomatoes and scallions got soften, then pour flour in this mixture and stir them. As a result, the sauce will get thicken.
Step 5
When the sauce gets enough thickness, add cream, wine, and seasonings in it. After this, wait until the mixture boiled. When the mixture reached the boiling point, then reduce heat from medium-high to very low.
Step 6
After reducing heat add half a cup of shredded Parmesan cheese to the mixture, and do not forget to stir the mixture with a spoon to incorporate all the things well. Mix them with the spoon until the mixture reaches the point of smoothness.
Cooking Pasta.
Cooking pasta is very easy and simple. Cook 10 or 12 oz of pasta according to the instruction of the package. But yes! One thing that you keep in your mind that you must have to cook pasta after cooking the sauce. Because freshly cooked pasta can absorb sauce very well. The absorption of creamy sauce by the fresh pasta will make pasta very tasty and delicious.
Adding all the things together for final assembly
Step 1
First of all, add cooked pasta and sauce to the pan and stir well with a wooden spoon to mix them all. Keep heat at a low level.
Cook both together for two to four minutes.
Step two
Now add cooked chicken on the top of the pasta, which we cooked and put aside earlier. Keep cooking all these things for 5 minutes. You can serve chicken on top of the pasta or place the chicken next to pasta as you desired. Add Shredded Parmesan Cheese on top of the dish and VALLA! ALL DONE. ENJOY THE MEAL!!
